Pumpkin Squares are a holiday staple for my roomie Claire. Whenever my roommates and I see her come home with a can of pumpkin, we can only hope she’s making these buttery, amazing, delicious squares. Here is her famous recipe which will impress all of your family members for years to come.
Prep: Preheat oven to 400 degrees
Ingredients and Instructions
- 1 pkg of yellow cake mix (minus 1 cup, which you should set aside for topping)
- 1 stick of butter
- 1 egg (beaten)
Mix together in a bowl then press evenly into the bottom of a 13″ x 9″ pan.
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 TBSP molasses
- 1/2 TSP (each) of nutmeg, ginger, cinnamon, salt (add more of any to taste)
- 2 cups pumpkin puree
- 2 eggs (slightly beaten)
- 2/3 cup evaporated milk
Mix all ingredients and pour over the crust. Put in the oven for 10 minutes at 400 degrees. After topping (below) is added, reduce heat to 350 degrees and bake for another 30-35 minutes.
- 1/4 stick of cold butter
- 1 cup yellow cake mix (from before)
- 1/4 cup sugar
- 1/2 TSP cinnamon
Mix together until chunky like oatmeal. Sprinkle over the filling over the filling after 10 minutes of baking. Then, reduce heat to 350 degrees and bake for another 30-35 minutes, or until firm.
Cool, cut into squares, and enjoy!
